Designed as a large-volume pre-mixed which is loaded with the flavours associated with festive period, making it perfect for your holiday party. Reserve the remaining cordial to use in brunch beverages, desserts, or to mix additional servings of bikinis.
Bikini Recipe
Makes enough for 10 people
Ingredients for the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Cocktail (produces 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
Making the Cordial: Put all the ingredients into a pan, bring to a light boil, mixing so the sugar melts. Next, turn off the stove allowing it to cool down entirely. Decant into a clean bottle, seal keeping it chilled, where it will keep for up to four weeks.
For the Cocktail Base: Combine the specified liquid ingredients into one large bottle, leave to sit for an hour, then pass it through preferably using a fine cloth, so it's completely strained.
When ready to serve: Pour 85ml of your premix into a mixing glass packed with ice, and stir gently for a minute to cool it down. Filter into an chilled martini glass or a similar vessel, decorate with a few cranberries and complete it using a quick spritz of mandarin oil above the glass.
